Gluten Free Menu Swap/Menu Plan Monday-Nuts

The gluten-free menu plan this week is all about warmth and speed. Heather at Celiac Family chose nuts as the theme, but the only nut in our house is the mom who thought going back to school in the worst winter in recent memory was a good idea. The kids don’t particularly like nuts except for the sliced almonds I mix into the topping for fruit cobblers or the almond flour I use in baking. Speaking of cobbler, lets get to the menu so I can batten down the hatches, fill the bathtub and gather firewood before the next storm hits.

Caribbean Fisherman’s pie with a sweet potato topping over roasted veggies, beans, spicy tomato and white fish with coconut milk.
Winter Vegetable Cobbler-yes, a savory cobbler
Spaghetti and Meatballs from the freezer
Beef and Black Bean Chili in the slow cooker
Kim’s Kale, Cabbage, Bean and Sausage Soup, I just ate some of her Pumpkin Ale Chili from a batch in the freezer and I’m going to trust her on this one, too.
Pizza night–experimenting with the Gluten-Free Girl pizza recipe
Nancy’s Risotto with baked chicken
Beef Stir-Fry

For dessert I’m experimenting with The Spunky Coconut cookbook.
