
I met Nancy from The Sensitive Pantry on Twitter and then in person at BlogHer Food in San Francisco this fall. Not only is she the sweetest, she is a creative and imaginative cook. She posted a breakfast risotto the week Sea at Book of Yum announced the latest Adopt A Gluten-Free Blogger challenge, so Nancy and her risotto were on my mind when I signed up. After browsing Nancy’s gluten-free recipes at The Sensitive Pantry, I saw a theme forming. I wanted to try her risottos, both sweet and savory.

The Toasted Coconut Breakfast Risotto was the perfect winter comfort food. It was warm, creamy, slightly sweet and topped with the toasted coconut it chased away my mid-winter chill and breakfast boredom. What a combination of creamy and crunchy and a fun change from oats.
After a week of the flu, my appetite was gone. Nancy’s Caramelized Fennel & Onion Risotto tempted me back into the kitchen and back to solid food. Once again, Nancy paired several flavor layers with the creamy risotto for a satisfying dish. I’ve never cooked with fennel and only eaten it twice in restaurants, so this was a great introduction to using the slightly licorice flavor in a recipe. Caramelizing the onion and fennel adds a mellow, subtle flavor to the risotto.
