Gluten-Free Menu Plan

Spending some time with a new cookbook

 

This week I’ll be cooking from Amy Green’s Simply Sugar and Gluten-Free and getting some menu help from my friends Carol at Simply Gluten-Free and Stephanie O’Dea at A Year of Slowcooking.

  • Pistachio Crusted Tilapia with citrus salsa from Carol at Simply Gluten-Free
  • Chicken Sausage with Sauerkraut and Potatoes
  • Pesto Minestrone with socca
  • Chicken Fried Rice
  • Turkey Meatloaf from Amy Green’s Simply Sugar and Gluten-Free with her green beans and red peppers
  • Sweet Potato and Black Bean Tacos From Amy also, with Carrot and Jicama spicy slaw
  • Deep Dish Lasagne in slow cooker from Amy

Heather of Celiac Family is hosting this week with a theme of celery. Celery is in my menu plan every week, but as a layer of flavor in soups and stews, stuffed into the roasting chicken or chopped on when I need a crunchy fix and I’m trying to avoid the kids’ bag of chips. Celery is in the Pesto Minestrone and the Chicken Fried Rice this week. If you are a fan of celery root, I made a celery root soup during the holidays.

Last week’s adoption of Ellen from Gluten-Free Diva was a success and the fish tacos were my favorite. I ponder eating gluten-free away from home during three local conferences in a post and I would love your thoughts.

The birds are singing this morning despite the snow on the poor daffodil buds and freezing temps after a rainy 50 degree weekend. They must know something about the arrival of spring. Have a great, gluten-free week.

    It seems like we’re all checking out Amy’s book this week! We lucked out with beautiful weather today, hope it’s heading your way soon.

    • That’s just too funny that we were eating Amy’s roasted cauliflower at the same time last night. That recipe is now on the weekly menu plan. The family just eats it up(like your hubby).

    I hope you had some great meals, Wendy! Yes, the turkey meatloaf…Joe’s favorite. I made a double batch last week so I could put one loaf in the freezer. In fact, he took the leftovers for lunch and the people he works with tried to take it from him. Just so happens I’m going to bake the second one off tomorrow. Joe can’t wait to eat a meatloaf sandwich.
