Gluten-Free Menu Swap/Menu Plan Monday

Those cooking lessons pay off when Mom is MIA.

 There were lots of stir fries, fried rice, subs, omelets and beans and rice this week while Mom was confined to her bed with the flu. I knew they were eating well by the countertops covered with dirty dishes and the vegetable peelings, cabbage leaves, and other debris surrounding the trash can and the dried rice and eggs on the pans in the sink when I made my way to kitchen to make tea on day 3 of fever, chills and nausea. I heard the rumble of the Vitamix twice a day, so I knew they were making smoothies. By the time I resurfaced, the kitchen was clean and even the appliances had been shined. I do ponder how the youngest can make a basket anywhere on the basketball court, but can never quite make it to the trash can with the vegetable scraps. I also ponder the mystery of how they can let the kitchen go until every dish is dirty and then clean it so throughly that they even polish the tea kettle till it shines.

Success of the week is Caramelized Fennel & Onion Risotto

Needless to say the menu plan went out the window with my appetite and 6 pounds. I wouldn’t recommend this weight-loss plan, though. The only thing that I made was the risotto for my Adopt A Gluten-Free Blogger post.

Bacon and Broccoli Penne
Spaghetti and Meatballs from the freezer
Spicy Chicken Tenders done gluten free, baked potatoes, broccoli
Easy Chicken Hash
Tofu Stir Fry with broccoli, peppers, snow peas and rice
Roasted Salmon, quinoa pilaf, kale
Kim’s Kale, Cabbage, Bean, Sausage Soup and her new gluten-free granola bar recipe

Michelle over at Gluten-Free Smiles is hosting with chia seeds as the theme. I admit I haven’t tried them yet but Kim’s granola bar recipe has them. Shauna and Danny over at The Gluten-Free Girl are using chia and flax seeds to replace the gums in gf baking and having great success. That’s good news for gluten-free eaters like my youngest who don’t tolerate xanthan gum and guar gum.
