Quick, Easy Gluten-Free Meals

Stir fried veggies and tofu make it a meal

Can a house of busy celiacs eat well on the run? This week we proved we could have our veggies and a hot meal in a hurry. The kids are cooking more and cleaning up more, too. I found two gluten-free products with an Asian flair that helped make quick meals when mom is spending days in the big city and coming home tired and hungry. I like Thai Kitchen curry pastes and coconut milk and their noodles. The Thai Yellow Curry made a flavorful and fast meal with stir-fried vegetables and tofu. Not too spicy for the man of the house, but plenty for the rest of us. It’s a great way to use up all the bits of veggies at the end of the week, too.

I spent all day at a conference and needed a comforting bowl of noodles and fast. A pot of Tinkyada spaghetti, some cubed and browned tofu, and lots of broccoli and peppers, a generous pouring of San-J Thai peanut sauce and dinner was on the table. I always use San-J tamari because it is gluten-free and it has the best flavor. The Thai Peanut Sauce had just the right peanut, garlic, ginger flavor. Nothing was over-powering and it was a quick way to jazz up plain noodles and vegetables without making a sauce when I was just too tired to drag out the recipe and measure and mix. I say anything that gets that many veggies in a meal that fast will be in the pantry ready for the next emergency.

Disclaimer: These were items found at my local grocer’s and purchased by  me as emergency rations to keep handy for quick meals and to make it easier for my kids to throw together a meal.

    I am a big fan of Thai Kitchen. I use their Red Curry Paste all the time to make my curry dishes. And though I’m a fan of make it from scratch as much as possible, there are times where quick and easy is necessary. And for those times, you got it pegged – especially if the kids can easily do the cooking! I haven’t yet tried the Thai Peanut Sauce – I will give it a whirl. Thanks Wendy!

    • I have really been trying to think like a college student away from home again and working with GF products like these in preparation for the kids leaving next fall. The reality is that my kids do cook more than most and demand veggies, but college life and doing their own clean-up will influence how much from-scratch cooking goes on. It is so helpful to have sauces and rice mixes to build on when Mom is no longer shopping and planning and preparing their meals.

    Thanks for the mention of my San-J video. I truly love the products and Asian is one of the things that we miss the most while being GF.

    I haven’t tried many of the Thai Kitchen products but I will go and check them out. And I agree about the college concept of quick and easy. That is why the Asian GF sauces that are already prepared makes life so easy. Just throw them on your meat or veggies and voila – in 6-8 minutes you have a meal.
