School started last week and I’ve been putting some miles on the Mom mobile. The farmers’ market is packed with produce and the only trouble I have is finding time to use up all the bounty.





Back to School Week Menu
Spaghetti and Meat Sauce, salad- made by Dad and ready for us when we returned from Zoombezi Bay.
Fried Rice with Tofu
Turkey Cutlets, Risotto, Steamed Veggies
Mexican Lasagna, tossed salad
Turkey Potpie made with leftover turkey cutlets
Pizza night with a Schar Bread Mix crust. Thumbs up all around for the crust.
Grilled Chicken, roasted garlic and potatoes, green beans
Baking-Pamela’s Bread mix for sandwich rolls. I used the bagel recipe, but no holes and no boiling. Very good.
This week’s menu:
Roasted Chicken, garlic mashed potatoes, green beans
Turkey meatball stroganoff w/ fettuccine
Fish Cakes, coleslaw
Grilled Bison Burgers, fries
Pizza night
Mexican casserole with green sauce
Tofu Stir Fry
Sea at the Book of Yum is hosting this week with a theme of eggplant. Last time I tried eggplant, I didn’t get a lot of enthusiasm from the family, so I’ll skip it this week.Laura at the Organizing Junkie has more menu plans, some are gluten free or easily adaptable recipes.
