What’s for Dinner? Wednesday-Gluten Free Tamale Pie

This was going to be a quiche, but the crust was not coming together right and it was too thick. I was trying samples of the new Pamela’s Cornbread & Muffin Mix. Alison at Sure Foods Living reviewed the cornbread this week, so I wanted to try another recipe on the package. I followed the recipe for the savory tart crust, but it didn’t roll out. I finally pressed the “dough” into the pie pan like a graham cracker crust for cheesecake.

You can see that the cheesecake crust technique was successful. Still, it seemed too thick for the prosciutto and asparagus quiche I was planning. So I took a Whole Foods Bakehouse gluten free pie crust out of the freezer and made the quiche.Then I flipped the pages of the Whole Foods for the Whole Family cookbook from my La Leche League days from the quiche recipe to the Tamale Pie recipe. A little digging through the pantry and I had a tamale pie in the oven, too.

Tamale Pie Filling

1 lb. browned ground turkey
1 cup sweet frozen corn
1 14.5 oz can beans ( I wanted black, I had white kidney(canellini)
1 14.5 oz can Muir Glen Adobo flavored diced tomatoes
Shredded cheese to top.
Stir everything together in a skillet and heat through. Pour into prepared cornbread mix crust , top with cheese and bake 350 for 25 minutes.
I used the last of the Cilantro-Mint Chutney from yesterday to stir into mashed avocado for a fusion guacamole.
The cornmeal crust turned out great. The crunch and the taste was perfect with the spicy filling. It was worth the effort to get it shaped into a crust-like substance. I’ll see if the folks at Pamela’s have any suggestions or can troubleshoot where I went wrong, but definitely worth a repeat from the taste and texture alone. The teens want it again.
