We tried the 123 Gluten Free Pan Bar mix with canned pumpkin. Kroger had this line on sale the month of December. This was a hit with everyone.

Throw chicken breasts into crockpot on top of onion and sprinkle with salt and pepper.(8 breast halves with or without bone–about 4 1/2 pounds)
1 large onion (or not at our house)
1/2 tsp salt
1/4tsp pepper
1/4 cup honey
1/4 Dijon mustard
1 TBS curry powder
2 large red peppers in strips(I forgot these)
Serve with hot cooked rice
Stir together the honey, curry powder and mustard. Pour over chicken and cook on low 5-6 hours or high 2-3 hours.
This seemed too strong when I tasted it, so I stirred in about half a can of light coconut milk and let it heat while I finished the rice and the roasted sweet potatoes. I served it with extra fine green beans from Aldi sauteed in garlic and olive oil. My teens love these green beans found at Trader Joe’s, too.
I came home from the studio with plans to use the leftovers for another meal. They were gone. I showed my son the cover of Cook Once-Eat Twice and he replied,”But, I did eat twice.” So much for that plan.

The Tinkyada stuffed shells taste just like our pre-gluten recipe.
Cook the shells. Stir together 1 tub of ricotta(there are recipes that use tofu) with an egg, some parsley flakes, dried Italian seasoning, 1/4 cup Parmesan, 1/2 cup mozzarella and 1 package of frozen spinach that has been thawed and squeezed.
Fill the cooked shells and line them up in a baking dish with marinara sauce. Cover and bake 350 for about 1 hours. Take off foil and top with a little mozzarella and take it out when the cheese is melted and golden.
Where can you find gluten-free pumpkin? I have one here to puree on my own, but it certainly won’t last until next year’s crop. BUt I LOVE pumpkin in breads and muffins but all the one’s I’ve found have wheat in them?

I used Libby’s. It says gluten free on the label, is listed on the Celiac Smart List app for iphone, and is on the celiac.com discussion forum as safe and used by sensitive celiacs. That’s the kind of back up I am looking for these days. How would we be able to eat without the Internet?

PS – Your son’s comment was hysterical! Our little guy is only 3 1/2 but he is already eating us out of house and home!
