Back in the early 90′s when Columbus had a few tiny health food stores with a meagre supply of pale, limp organic vegetables, I would order a box from Diamond Organics filled with vibrant, life- filled organic vegetables. During the winter months, that box of veggies was a welcome change. Along with the greens, fruits, and organic peppers, potatoes, and yams were recipes and cooking instructions. I still use the Portuguese Kale Soup recipe with a few adaptations. We do love our kale in this house. We saute it with garlic and olive oil as a side dish or for pizza topping, but we really love it in soup.
We are trying bread recipes to go along with the soup and a winner in that competition is Pamela’s Wheat-Free Bread Mix. To be honest, I didn’t buy my first bag. I’d pretty much given up on mixes as too expensive and unsatisfying. Then I won a bag of Pamela’s when their newsletter popped up in my mail box as I was checking my email. They were giving away 10 mixes to the first 10 responses to the newsletter and I was one of the winners. It is the closest to a honey wheat bread we’ve tried. It makes great toast and the first satisfying sandwich I’ve had on untoasted gf bread.

3 cloves garlic, minced

3 large onions(good without if you have an onion hater-we do)chopped

2-4 large carrots sliced or diced

3-5 potatoes(more if you love ‘em)

1/2 to 1lb gf chicken or turkey sausage-we love Trader Joe’s Jalapeno Chicken Sausage

1 large bunch of Kale chopped

olive oil
-
2 qts vegetable broth, chicken broth or water

salt and pepper to taste

one 15 oz can drained and rinsed white beans(the original recipe calls for kidney beans, but kids like cannellini better)
Saute onions and garlic until translucent(my favorite part)toss in the diced sausage, then add carrots, potatoes. Add liquid and bring to a boil and simmer until potatoes and carrots are tender. Add the beans. Add the kale and press it down into the soup and simmer until the kale is done(1/2 hour-20 mins. depends on the freshness and kind of kale you use) Season with salt and pepper and hot paprika if the sausage isn’t hot enough for you.
