Weekly Gluten-Free Menu Plan

Is it Spring Yet?

Who stayed up late to watch Colin Firth get his well-deserved Oscar? I did and I was more entertained by @rosannecash and her Tweets using Jane Austen quotes to poke fun of the show with the #JaneAustenAtTheOscars. The night was full of thunder, lightning and hail after that, so this will be a quick menu post to get my week organized.

I’m adopting Ellen from Gluten-Free Diva this week, so three of her recipes are on the menu. Lexie’s Kitchen is the headquarters for Adopt A Gluten-Free Blogger this time. Visit Lexie to see the adoptions. And speaking of the adoptions, Sea of Book of Yum, the creator of this fun event had a kale recipe roundup last week. All the kale fans should go find more ways to eat your favorite veggie.

  • Fish Tacos from Ellen at Gluten Free Diva
  • Spicy Sesame Peanut Noodles also from Ellen
  • Socca Pizza from Amy at Simply Sugar & Gluten Free-from her new book
  • Buffalo Chicken Mini Burgers from Diane at The W.H.O.L.E. Gang-requested by the youngest-again. Fries and coleslaw.
  • Spaghetti and meatballs in slow cooker sauce using my frozen tomatoes
  • Turkey Cutlets in Mustard Pan Sauce with White Bean Puree and Collards from Ellen too.
  • Chicken vegetable soup, cheddar muffin tops with Pamela’s Baking Mix

Scrumptious over at In My Box and part of a new vegan and gluten-free blogging group is hosting the Gluten-Free Menu Swap with a theme of  DIY or make your own. I need to use up some masa, so the tortillas are homemade this week using my mom’s 30 -year-old tortilla press.

Laura at Organizing Junkie has 100s of menu planners linking up each week with great menu ideas and some are gluten free.

Whew! If you were a dog, you’d be a border collie. I can’t keep up with you (and some of these other prolific GF bloggers). Just when I think I have a grip, you change everything on me. I had to read the “about” page to make sure I was in the right celiac house. Love the new look, loved playing catch up and reading some past posts (rueben waffles? you are one creative girl!). Also read every word on your “about” page. Wow, I didn’t realize you’ve been through so much. Ugh, my heart goes out to you.

Anyway, I loved snooping around. Good stuff over here! Must get with the Adopt a Blogger thing.

Wendy your menu this week sounds fabulous! I want to eat everything on it (everything that’s vegan, I mean. Plus the fish tacos. And the muffin tops. Mmm….)!

Beautiful makeover, too. I *love* the cursive font and the colors!

    • Thanks, Scrumptious. I let my kids decide on the look of the blog this time. I’ll tell them you like it. That was some party you had. That post was so fun. Thanks for hosting the swap this week.

I love that picture. Is it from now near you? We definitely don’t have buds yet, but I’m eagerly waiting.
the socca pizza sounds awesome, and I can’t wait to see your adoption, too.

Colin Firth. Yes yes yes! Wasn’t he wonderful? A mouth watering menu, as always. Looks like you’ve chosen some amazing recipes. We had your salmon fish cakes here tonight. An instant hit! N xo

Your blog has such a great look. I am loving it! Great menu, also. Now I gotta go check out the recipes. They sound delicious!

What a beautiful tulip photograph! I see you realized (like me) we need to make our Adoption recipes and fast. hehe. I have a week of Alisa’s recipes planned myself. Colin Firth is lovely. And so is your new blog design!

    -Sea

    • The tulips are beautiful and I see that something has decided to peek out of the leaves and even has a bud on it. I’m guessing the daffodils and crocuses are getting ready for spring. Yes, indeedy, that Adoption deadline caught me by surprise and we are dining with Ellen this week!

  8. Shirley @ gfe says:

Beautiful tulips, Wendy. I just got one of those annual emails of fields and fields of tulips in the Netherlands. They brightened my day for sure!

Yes, I was happy to see Colin win–love him! I was wondering what the Jane Austen thing was about, but never checked it out. I did see some other tweets and they were pretty snarky, and some were downright mean. Oh, where we find our amusements. LOL

You always do the best adoptions with multiple recipes! Can’t wait to see how your week of food turns out. :-)

    Shirley

    • Shirley-Can’t go wrong with tulips or Colin Firth to brighten one’s day. And you can’t get too snarky using Jane Austen quotes. Well, the Gwyneth Paltrow quote was borderline. Or “I have not the pleasure of understanding Miss Blanchett’s gown.” Okay, only Jane Austen geeks get it.

Let me be the 8 millionth person to say beautiful tulips. I stayed up late to watch Colin Firth. Wanna hear something kinda funny and kinda sad? I heard them say “Colin Firth” and I thought I really like that name Colin. Then I remembered my OWN SON’s name is Colin (and yes, I did name him). The good news is I still love the name, the bad news is…well, I am obviously loosing my mind!

Sounds like you have a good week of eating ahead!
