Gluten-Free Menu Swap/Menu Plan Monday Pomegranates

 It was a quiet holiday for the celiacs in our house. We chose to stay home by the fire for most of the seasonal madness.

 We hid in the woods with the herons and

 the woodpeckers and read real books from the library and rang in the New Year with a Doctor Who marathon followed by a New Year’s Day Two Fat Ladies marathon. I know, we live an exciting life.

 Here I am back to menu planning and the first tip of the new year is this Ziploc Vacuum system I learned about in a cooking class. This little gadget has saved lots of high quality produce, pesto, chipotle peppers and bread crumbs that would have been wasted or freezer burned by now. This is a shot of pomegranate arils that I saved from Christmas when I used them to top my Celery Root Soup. Some were also tossed into berry smoothies. Pomegranates are the theme this week chosen by Angela and I found a great smoothie recipe to try that includes them. The Gluten-Free Goddess has a list of smoothies in her post. The plan this week uses recipes from some of my favorite cookbooks that I browsed and read during my holiday blogging break.
Meatless Monday-Ali’s White Bean and Vegetable Stew from The Whole Life Nutrition Cookbook with Gluten Free Girl and the Chef’s bread and a Romaine salad.

Rioja Beef Stew with chickpeas from Perfect One-Dish Dinners with a baby greens salad.

Elana’s Herbed Turkey Loaf from The Gluten-Free Almond Flour Cookbook with Roasted Winter Vegetables adapted from The Gluten-Free Good Health Cookbook and some fried green cabbage. 

Asian Chicken Thighs that are marinating in the fridge right now and swimming in honey, ginger, garlic, tamari and sesame oil. These will be baked and served with a vegetable stir-fry and rice tomorrow.

Lamb neck bones in the slow cooker with Moroccan flavors and served with brown rice and green beans

Spaghetti and Meatballs with Schar garlic toasts and a big salad

Roasted Salmon served with Potato Kale Cakes and red cabbage slaw.

I’ll bake a peach crisp and some of Kim’s banana cranberry muffins.
