Gluten Free Menu Swap/Menu Plan Monday June 8th

Spinach, two kinds of peas, garlic scapes, asparagus, green onions, goat feta, eggs, and strawberries were at the farmers’ market this week.Tomato and pepper plants, basil and thyme for $1 each were the late planting season bargain.

Betty Crocker Gluten Free cookie mix was spotted on the shelves of my local Kroger on Friday night and the youngest had to test them early Saturday morning. They were pronounced very good and are $2 cheaper than the mix she has been using from the healthy foods store. She likes these for her lunch box.
The theme for the Gluten Free Menu Swap is Pizza. I’m making a California Pizza Kitchen Thai Chicken pizza on a Jules Gluten Free crust. This recipe link has the blend of flours she uses.
Lettuce Wraps with ground turkey instead of ground chicken. A veggie version from Book of Yum is the starting point for the seasonings.
Grilled Halibut with a nectarine and radish salsa I found in the latest issue of Cooking Light.
Grilled Steaks with risotto and asparagus.
Stir Fry with Peas, tofu and whatever else is growing in the garden.
Pasta with Garlic Scape Pesto.
Grilled Chicken, spinach salad with berries and goat feta, and pomegranate vinaigrette.

    I wish our local farms market had veggies like that! Ours just has plants right now. The cookies look really good! Our grocery hasn't had the mixes out yet either! Maybe I need to move a state over? Indiana's just behind :(
