Gluten-Free Turkey Curry

We had this after an afternoon in the snow at the Christmas tree farm where we enjoyed the yearly ritual of arguing over what kind tree(fluffy or prickly) and how tall and how wide will actually fit in the living room. I use the Trader Joe’s Curry Simmer Sauce and Louis Rich’s turkey breast tenderloins. Instead of simmering on the stove with chicken and adding one cup of water, I pop the turkey covered in sauce(no water) in a casserole with lid into a 350 or 375 oven for about an hour. Meanwhile make a double batch of jasmine or basmati rice and microwave some frozen peas. I slice the turkey when it comes out of the oven and let it sit in the sauce while I get the rice and peas finished. There’s dinner and lunch for the next day at our house.

    Too bad the TJ’s Curry Sauce is made in a facility with milk and nuts(says so on the label),but it is on their GF list.Hope TJ’s isn’t the next Tribune story. What’s a mom to do? There’s always homemade curry.

    Just couldn’t stand being blogless. I had my first taste of real Indian food in your beautiful country at the Viceroy of India in York(just a bit north of Bath!)This is a pathetic imitation, but so good after the howling wind at the Christmas tree farm.
