Visiting the farmers market and bringing home tender kale, spinach, radishes and asparagus was the highlight of last week. While my own garden was delayed by a very wet spring, our local farmers seem to have dodged the raindrops to get their crops planted. The menfolk bought tomato plants and I planned the herb garden.
The menu for this week:
- Asian Shredded Beef with rice and stir-fried veggies
- Diane’s Buffalo Chicken Burgers, slaw, hash browns, baked beans
- Inside out Turkey Lettuce Wraps-a salad using ground turkey, stir-fried veggies minced fine or shredded, bean sprouts and San-J Thai peanut sauce over shredded romaine because one of my kids loves the PF Chang lettuce wraps, but not the mess of making and eating them. We compromise with a salad and use turkey.
- Steamed fish and greens from the Cook It Allergy Free app for the fish eaters and leftover burgers for the one who can’t even stand the smell of fish. We love this recipe that combines fish with spinach and chard.
- Grilled chicken, baked potatoes, grilled asparagus
- The rest of the week is not mom’s problem. I’ll be in DC for Eat Write Retreat!
Heather at Celiac Family is hosting the swap this week with rice as the theme. We use jasmine or basmati rice for our stir fries and Asian dishes every week. My youngest can’t tolerate brown rice. Fried rice is a favorite of my kids and their friends who visit. It’s a great way to get lots of veggies into them. Visit Cheryl for the headquarters of our swap if you’d like to join us.

Me, too. My last big fling before the kids go off to college and we all hunker down and get very frugal.
