Gluten Free Tuna Slaw

Shredded raw vegetable salads have been so satisfying. I think I’m feeling the need to lighten up meals for spring. Two slaws this past week have been lunch and I made them with a can of skipjack tuna, a quick vinaigrette and a clean-out of the vegetable drawer.

Tuna Cabbage Slaw

  • 2 cups finely sliced savoy cabbage
  • 1 carrot, peeled and shredded
  • 1/4 cup red pepper, finely diced
  • 3 Tbs red wine vinegar
  • 2 Tbs olive oil
  • 1 tsp agave or honey
  • 1 clove garlic crushed
  • 1 tsp Dijon mustard
  • salt and pepper
  • 1 can skipjack tuna

Toss together vegetables and chunked tuna. Whisk together oil, vinegar, agave, mustard, garlic and season to taste with salt and pepper. Pour over slaw and serve. Makes two generous lunch portions.

Asian Tuna Slaw

  • 2 cups shredded carrots
  • 1 cup red pepper, diced
  • 1/2 cup water chestnuts, diced
  • 2 Tbs chives, snipped
  • 3 Tbs rice wine vinegar
  • 2 Tbs light olive oil
  • 1 tsp agave or honey
  • a few shakes of toasted sesame oil
  • 1/8 tsp granulated garlic
  • a dash of GF tamari
  • 1 can skipjack tuna

Toss vegetables and chunked tuna. Whisk together dressing ingredients, toss and serve. 2 generous lunch portions.

    Yum! I spent most of my life avoiding slaw … what a dodo I was! LOL I usually have tuna salad mixed with cole slaw greens, but I like this idea much better. Thanks, Wendy!
