This is the time of year when the man of the house is accosted by neighbors and forced to bring home the over-flow from their gardens. Squash, beans, and cucumbers were pressed into his hands as he left the barn yesterday and were eaten immediately. The squash was brushed with olive oil and grilled alongside a marinated flank steak. The beans were sauteed with olive oil and garlic and served on top of the Asian rice salad that had matchsticks of cucumber and shredded carrots along with the steak and squash.
The Asian Flank Steak Salad was adapted from Lorna Sass’s Whole Grains Every Day Every Way. While not a gluten-free cookbook, most of the whole grain recipes can be made gluten free and she has some innovative ways with gluten-free grains. Most of her books are available at my local library. I started with her pressure cooker books and then began exploring her other titles. Here is my adaptation using ingredients in my pantry and a marinade recipe I found that omits onions for my youngest. The link has complete grilling and slicing instructions for flank steak if you need more info.
Marinade Ingredients
1/3 cup olive oil
2 cloves garlic, minced
2 Tbsp wine vinegar
1/3 cup gf tamari
1/4 cup honey
1/2 teaspoon freshly ground black pepper
2 tbs of sesame, garlic, ginger spice blend
1 tsp toasted sesame oil
Other ingredients
2 pounds flank steak
Place all ingredients in a freezer bag and massage marinade into steak that has been scored. Marinate at least 6 hours-overnight is best.
Rice salad
3tbs almond butter
2-3 tbs water to thin dressing
1 1/2 tbs sesame seeds(preferably black seeds) or a sesame seed and ginger, garlic spice blend
2 tbs rice wine vinegar
2 tsp tamari
1 tsp toasted sesame oil
1 small clove garlic, minced
chili oil optional
3 cups cooked brown rice
1 shredded carrot
1 cucumber, peeled and cut into matchsticks
Mix dressing ingredients and stir into rice, carrots, sesame seeds , and cucumbers. Top with grilled and thinly sliced flank steak.


She doesn’t get that instruction-following ability from me. I get the important job of removing all the pesky warning stickers.
