The celiacs in this house have been well-fed the last few weeks thanks to Amy Green, Stephanie O’Dea and Ellen Allard. Stephanie’s Peanut Butter Chicken, Pesto Minestrone and corned beef recipe, a thorough review of Amy’s new cookbook with her meatloaf, Socca Pizza, slow cooker lasagna and Sweet Potato and Black Bean Tacos, a few desserts from Amy and Ellen’s Spicy Sesame Peanut Noodles for dinner twice and for lunch twice have had our taste buds traveling the globe.
Adding a slaw to tacos will be part of our menus from now on. The crunch of cabbage, radish and carrot on the spicy taco filling was a delicious way to get even more nutrition and fiber into a gluten-free meal. Amy’s recipe called for jicama, but the sad, overpriced and aging jicamas at my grocer lost out to finely shredded cabbage that was cheaper and fresher.
Roasted cauliflower from Amy’s new cookbook has been a favorite side dish two times as well. The curry powder and garlic with the sweetness of caramelized cauliflower takes this often maligned veggie to the top of our hit list.
The Vanilla Bean Cake inspired by the Spunky Coconut recipe by Kelly Broznya was smeared with chocolate hazelnut spread when the avocados kept disappearing before I could make a frosting with them. Those menus are hard to top, but I’ll give it a shot this week. Since it’s National Noodle Month I’ll include them on the menu.
- Pan-Seared Marinated Cod on Wilted Spinach from Jenn Cuisine whose photos always make me hungry. Check out her food photography tutorials and tips.
- Kale Pesto on Quinoa from Cheryl at Gluten Free Goodness, my GF adoptee of the month , roasted butternut squash
- Beef Stew in slow cooker
- Sniffle Stew from Cheryl
- Aunt Kathryn’s Chicken Paprikash on GF egg noodles or perhaps homemade egg noodles if I’m feeling ambitious
- Chicken Lo Mein
- Clean out the veggie drawer crepes dinner using a new garbanzo bean flour crepe recipe from a free gluten-free bean cookbook Cheryl shared and my savory crepe filling.

Heather at Celiac Family has week of gluten-free, kid-friendly meals in pictures. She’s working her way through Amy’s cookbook and has taken my advice on the Socca Pizza and trying Amy’s Stuffed Chicken Breasts and her roast chicken recipe too. Chicken Spaghetti and kid-pleasing burgers round out the week.
Sunrise Noodles, nori rolls, caramelized onions in the Crockpot, and Potato Spinach Pea Patties with green chutney, are on the menu at Scrumptious’ house. Her blog, In My Box, is the place to visit for gluten-free vegan delights.
Cheryl at Gluten Free Goodness has been busy. She’s been teaching GF cooking classes and had an interview in The Washingtonian. Besides giving her house a thorough cleaning, she’ll be cooking up soba noodles in a Malaysian Curry that sounds intriguing. She has her Sniffle Stew and Garlicky Quinoa, too. If you like Twitter, you need to follow @cherylharrisrd now that Cheryl is on there regularly with gluten-free news and tips.
Angela is joining in with some great gluten-free noodle recipes, maple tapping, a family-friendly menu for a busy life and a Gluten-Free Celebrations blog carnival to join. Her Bison and Sweet Potato Stew and Molasses Drumsticks sound like menu plan rut busters to me.

There’s exciting news in the gluten-free community this week with an hour devoted to gluten free on QVC. Carol Kicinski, the author of Simply Gluten-Free Desserts and one of my favorite gluten-free blogs will appear on Wednesday, March 23 between 4 and 5 PM. Be sure to tune in and even call in and order her beautiful new book. You can always depend on Carol for elegant, beautiful, gluten-free recipes.

I’m slowly making my way through Amy’s new book. That roasted cauliflower looks great. Actually, everything you mention this week looks good: the tacos, the cod, the kale pesto on quinoa, etc.

All the food in your photos looks incredible! That socca pizza is just heavenly. Boy do I miss pizza! I also love crunchy cabbage and radishes in tacos. It adds so much, in terms of flavor, texture, and nutrition! Your whole week sounds yum as usual. You’ve been awesome on the GF adopting front. Oo. Wendy. What a round-up. That socca pizza has my mouth watering. We got stuck in snow in Tahoe until yesterday, so no published menu plan from me this week, but am going to use Amy’s book for inspiration right now before going to the grocery store to fill my empty fridge.
