- Taco night with beef filling and a side of Spanish rice
- Corned Beef and Cabbage with carrots and potatoes in the slow cooker, use GF beer or I’ve been known to use hard cider and chipotle mustard. And I also put corned beef on pizza and between waffles.
- Corned Beef Hash Cakes because no one is interested in the leftovers each year, but they eat anything in a cake form.
- Fish in Thai Coconut Curry Sauce because we are still craving this dish.
- Black Bean Soup and cheddar muffins
- Peanut Butter Chicken
- Tofu Fried Rice with lots of peppers, broccoli, snow peas and carrots

I do love that picture. You don’t still have snow, do you? The fish in Thai curry sauce reminds me that I have thai curry paste in the freezer from last year’s peppers that needs a home…in my tummy. Have a great week!
