D-Tox January with the G-Free Mom and Kale Smoothies

The two of the best things to happen to me in 2010 were finally jumping on the green smoothie bandwagon and buying myself a Vitamix.  When I did my 30 Days to 50 series, green smoothies were a big part of my plan to lose weight and boost my energy. A friend had been trying to get me to just taste a green smoothie, but I just wouldn’t. You’d think with my love of veggies and especially greens that it would have been something I would want to try and try often. So anyway when I started experimenting and whipping up smoothies everyday, I dramatically increased the amount of produce in my diet and my energy levels increased too. I could almost feel my body absorbing all those vitamins and minerals and putting them to use. I actually crave green smoothies now. I hear people say that the Vitamix is soo expensive, but compared to the cost of getting sick and paying medical bills, not to mention the increased productivity I experience when I’m getting all those raw fruits and veggies into my system, I decided I couldn’t afford not to buy the right equipment for the job.

I love kale in all its forms–steamed, sauteed, shredded into soups, mashed into potato cakes, and best of all in smoothies. Add in the tang of frozen cranberries that I stock up and hoard during the holidays and this smoothie packs a powerful punch of Vitamin C and A, tons of fiber and a good dose of iron. An apple adds a sweet smoothness to the mix.

Kale Cranberry Smoothie
2 cups chopped kale
1 cup frozen cranberries
1 chopped apple
2 cups water
Blast away in a Vitamix or blender for two servings
Now this green smoothie does end up brown from the combo of dark green kale and the red of the cranberries and some may need to add a couple of pitted dates to sweeten it up, but I like the tart flavor and don’t add sweetener anymore. I usually make two servings and drink one right away and stash one in the fridge for later. Just a quick stir and it’s ready to pick me up in the afternoon.

This smoothie isn’t as pretty as the Romaine lettuce smoothies with pineapple, orange and banana,

or the spinach smoothies I share with the man of the house. But it is hearty and satisfying and best of all an appetite suppressant for me that gives me a feeling of fullness that lasts for hours. It’s an antidote to the holidays that will help me keep my healthy living resolutions I made this summer even during the dark days of winter.
