We were getting tired of the same old beef burgers tossed on the grill so here is the second new twist on turkey burgers to mix up the menu plans a little more.
I searched the Web and found several versions of this burger. I looked at all of them and decided to just use what I had and make my own. Here’s my recipe:
Greek Turkey Burgers
1 1/2 pounds ground turkey
1 egg
5 ounces of frozen spinach(half the bag) thawed and squeezed
1/4 cup of crumbled feta
2 Tbs chopped fresh basil
1 tsp ground cumin
1-2 cloves garlic, minced
Salt and pepper
Mix this up and form into burgers. I shaped these to fit the smaller, oval Schar ciabbatta rolls we like for burgers. Pan fry or grill until done. Top with Tzatziki sauce, lettuce and tomato.
Tzatziki Sauce
1 8 oz. container of plain Greek yogurt
1 tsp red wine vinegar
1 1/2 tsp olive oil
3-4 mint leaves, chopped
1/2 large cucumber, peeled, seeded, shredded
1-2 cloves garlic minced
sprinkle of salt
Place shredded cucumber in a colander and sprinkle with salt. Let drain while you make the burgers. Squeeze out the excess moisture and stir cucumbers into the rest of the ingredients. Top burgers, use the rest to top tomato slices when teenagers eat all the burgers and you want more of this addictive sauce.
I’m thinking these would make great little meatballs, too. Recipe makes 6-8 big burgers or 10 petite burgers.
