My menu is late today because we had dental appointments this morning. I guess we’re now in the college years of getting all the medical appointments in before Christmas and before the kids take off back to school or travel plans. The dentist had an interesting observation that he notices inflammation in the gums of his celiac and Crohn’s patients. Our son who was glutened in the college dining hall had some gum inflammation this time and I will have to research this new aspect. Our menu plan is heavy on vegetarian meals at the beginning of the week before the feasting begins which stretches the budget and probably helps in other ways too.

Visit Heather with more meal planners and the schedule for our Gluten-Free Menu Swap. This week’s theme is holiday favorites. I tried to get away with Brussels sprouts without the garlic and heavy cream sauce at Thanksgiving and was outvoted. So, for Christmas dinner we will have that family favorite once again. (Just think lots of garlic cooked in lots of butter, stirred into heavy cream and poured over lightly cooked sprouts.) Laura has the largest gathering of menus each week and she always has great tips on planning and organizing.
A good place to look for gluten-free recipes and tempting menu ideas is Pinterest and Karina of Gluten-Free Goddess has a board full of them. I found the Cornbread Topped Turkey and Green Chile Pie recipe on her board, as well as the Sweet Potato Fries recipe on another board from last week.

Love that you’re starting the week with lots of veggies. I’d love to hear how the pizza with non-dairy cheese tastes. I’ve tried some of the non-dairy cheeses in the stores, but they really just don’t satisfy the cravings for cheese. I’ll be anxious to hear what you think.

Heather, I’ve been playing around with the nut cheeses and finding ways to just avoid cheese-like substances all together. I’ll be sure to report on my findings.

Renee, those Brussels sprouts are amazing. So rich, we only eat them for Thanksgiving and Christmas, though. I’d say most of the breakfasts and lunches and 1/3 of the dinners are typically vegetarian around here, and even more so when my daughter isn’t home.
