The holiday countdown is running through my head and all the presents are wrapped. The tree farm visit will be at the end of the week so we can all go together and the baking will start this weekend too. The lights are up and the decorations are out to welcome our college student home for three weeks of home cooking and probably lots of sleeping. Cheryl at Gluten Free Goodness is hosting with a theme of citrus. We’ve been eating lots of grapefruit and the obligatory holiday bags of Clementines will be in piled into bowls to decorate the dining room table and to provide quick snacks during the holidays.
Here’s the menu for this week before the big week at our house:
Conte’s Ravioli with the extra meat sauce I made last week. I found two bags in the basement freezer I was supposed to make and take to my daughter to stash in her dorm freezer. They must finally be feeding her well at school, because I didn’t get a call to replenish her freezer before finals week. What a relief not to have to cook for hours and drive 3 hours round trip and then worry about her in between.
Three Bean, Sweet Potato Slow Cooker Chicken Soup, Pamela’s Corn Bread
Sausage and White Bean Cassoulet from Perfect One-Dish Suppers. The recipe for this is almost the same as one on their site except you add 2-3 cans of white beans to the pan and roast for 10 more minutes. I use Aidells andouille so it is a spicy dish. We had this 3 or 4 times last fall and winter and it is a family favorite. Check out the Chicken Stew recipe there too. I love tossing everything into a roasting pan and having a beautiful dinner appear less than an hour later.
Grilled Steak, roasted Brussels sprouts( I need to double the recipe so we don’t fight over the really crispy leaves.) and baked potatoes to celebrate the start of Christmas Break for our college student.
Diane’s Mini Buffalo Chicken Burgers on Silvana’s waffles(we don’t use the Rice Chex) with this crispier sweet potato fry method.
Chicken, Broccoli and Peppers Stir Fry I’ll be using San-J Orange Sauce for this dish. It’s the only one I haven’t tried and I’m going with Cheryl’s citrus theme here.
Jules’ Crustless Quiche, Shredded Salad
These really cute brownies I found on Pinterest made gluten free. Cut out sugar cookies and gingerbread cookies.

Love the idea of white beans and sausage…quick, easy and yummy! So funny that you have to avoid Brussels sprout battles. it’s a sign of good parenting.
You are so funny. My brother and I were veggie eaters too. Don’t know if it’s parenting skills or that my mom and her mom and her mom just knew how to cook vegetables properly. And that beans and sausages dinner is so good and so super easy. Thanks for hosting us this week, dearie.
I’m so impressed that you’ve got all the presents wrapped! I’m still trying to finish the shopping…and the cards…and the decorating…oh, you get the idea. Do you have a recipe for the roasted Brussels sprouts? I haven’t been able to get my kids to eat more than a bite.
We just drizzle them with olive oil and sprinkle of slat and bake in 400 degree oven until they get nice and brown. Might try bacon or a little maple syrup.
