Gluten Free Fish Cakes and a Pumpkin Pie-Pt. 2 of My Cookbook Review

We had these for lunch today. I finally gave in to the cold bug that hit the rest of the family, so last week had the teens foraging for dinner on their own a few times while I took to my bed and hubby was away on business. I finally got to make the Thai Fish Cakes from the Gluten-Free Almond Flour Cookbook. We are big fans of fish cakes in this house. Well, three of us are. These were amazing with cilantro, lime, ginger, coconut and of course almond flour. They were crisp and flavorful and will be on our menus regularly. Served with a peanut dipping sauce, they are great as an appetizer or with a salad for lunch.

I made the pumpkin pie last week before the cold struck and lived off pumpkin pie the rest of the week. Not a hit with the kids. The texture is not like the real deal with evaporated milk. If you love pumpkin like I do, you may just decide to like it for its own merits. It has a wonderful fresh pumpkin flavor with just the right amount of spice and sweet. The almond flour crust is perfect for this and I am now converted to using almond flour crusts for everything except the sacred Thanksgiving pumpkin pie which must be as close to the “real” thing as possible. I recommend you buy this cookbook if you are looking for fiber, nutrition, flavor, and escaping the mysterious white powder rut of gluten-free baking.

    I keep seeing all these fabulous almond flour recipes, alas I would have some deathly ill people around here if I used almond flour (both my mother who is over often and son).

    Sure looks yummy.

    I hesitated to post about the almond flour because so many folks I know have big, scary nut issues. The thing is that the almond flour really works for me. All those white starchy powders that are GF also make me gain weight like crazy. The almond flour is easier for me to digest, feel full and satisfied and doesn't collect on my backside. We're all different and have so many different food allergies that I am just going to tell folks what works for me and my celiac clan.

    GF Pumpkin Pies are huge at the bakery at Thanksgiving (which in Canada, we celebrate in october)
