
Ramps are wild onions that grow from the Carolina’s to Canada, but are especially prized in West Virginia. Gathered in the wild in the spring, they can cost up to $10.00 a pound. I scored some at the local farmers’ market for $2.00 for two meals worth of the garlicky oniony greens.

I blanched them and patted them dry to top a Toro pizza crust to make a white pizza with three cheeses. The Toro crust is very similar to the Nearly Normal crust we like. I had just enough to make a crust (using less water) after making the sponge cake recipe.
The next night I sauteed the blanched ramps with olive oil and topped rice pasta (I brought this home from my trip to Seattle.)with the greens and grated Parmesan. Both very simple, but flavorful meals.

I think our ‘Wild Garlic’ is the same plant and we have it growing in abundance in the hedgerows and even at the bottom of our garden. It is delicious as a soup and homemade pesto..

It sounds like I would love ramps, but I’ve never seen them and would not pay $10 a pound if I did. I wounder if I could grow some. Anyway, your meals look delicious.
I use to live in WV. I could always tell who had eaten ramps. How did you fare? The pizza looks good.
